THE JOB:
At Spago, we're looking for an experienced Executive Sous Chef to assist the Executive Chef in leading our kitchen team. You will help drive menu development and execution, ensuring culinary excellence and consistency while achieving operational and financial goals. This role includes managing inventory, training, and staff performance, while executing F&B initiatives and maintaining MGM Resorts' service standards. Your focus will be on delivering exceptional menu offerings that enhance the guest experience, all in line with company policies and procedures.

THE DAY-TO-DAY:

  • Leadership & Operations: Lead and oversee all daily kitchen operations, ensuring smooth execution of service, menu strategies, and guest satisfaction. Drive fiscal responsibility with budget management, inventory control, and labor productivity.

  • Menu Development & Strategy: Collaborate with the Executive Chef to craft and execute dynamic, innovative menu strategies that elevate the dining experience and meet short-term profitability targets.

  • Team Development: Cultivate a positive, team-focused work environment. Manage staffing, hiring, and training to ensure the team is equipped for success. Foster a culture of recognition, mutual respect, and open communication.

  • Guest Experience: Interact with guests to ensure an exceptional dining experience. Handle guest concerns with grace, providing a quick and thoughtful resolution to maintain guest satisfaction.

  • Compliance & Standards: Maintain the highest standards of cleanliness, health, and sanitation. Ensure that all kitchen operations comply with company policies, local regulations, and company-wide initiatives.

  • Collaboration: Work closely with the service team to guarantee a seamless flow between the kitchen and the dining room. Ensure the restaurant's policies, procedures, and standards are adhered to across all departments.

  • Training & Development: Assist the Executive Chef in creating training programs and succession plans that support the company's commitment to diversity and growth. Lead by example to develop the next generation of culinary talent.

THE IDEAL CANDIDATE:

  • Work Schedule: Work varied shifts, including weekends and holidays

  • Previous Experience: Two (2)+ years of prior experience as an Executive Sous Chef or Chef de Cuisine in a high skilled restaurant

  • Education: Bachelors degree is a preferred

  • Skills: Bilingual is a preferred

  • Knowledge: Knowledge of Collective Bargaining Agreements is a preferred

  • Certifications: Food Handlers card required before start date
