Position Title: Bread Production Mixer

Wage: $17.00 - $21.00/Hour

Shift: 2nd Shift

Hours: 2:00 PM - 10:00 PM

Bread Production Mixer Responsibilities:

- Check the bread schedules to see what breads you will be mixing

- Find the formula you need from the mixing binder

- Based off the formula set amount of water needed using the water meter

- Based off the formula set the amount of oil needed, it is the same process as when you are setting the water meter. The only difference is that you need to choose which mixer you need the oil released to

- Based off the formula set amount of sucrose needed by using the sucrose meter

- Set your bulk flour. Refer to directions posted on the wall by the bulk flour screen

- Then you need to weigh out all ingredients, listed on the formula, under the heading the Happmann Scale. The Happmann then fills those ingredients into your mixer. Refer to the scale procedure directions. These are located on the wall next to the bulk flour screen

- Then you need to weigh out your yeast, making sure the bag is closed after each use

- Weigh out grinding, if available, typically 3/4 of a medium barrel unless instructed otherwise by your supervisor

- Load the mixer with all ingredients listed on your formula

- While mixing you should bring over the trough, hook it into the mixer & spray the trough with trough grease

- Once you complete your batch of bread you MUST check to make sure dough is developed correctly before you drop it into the trough. This done by grabbing a piece of dough and feeling it and verifying its fully developed

- If dough is developed you can then take the temp, drop it into the trough and then push over to the divider onto the trough lift. Then give the divider operator the temp of that dough too. If it doesn't meet QC requirements, leave in mixer and call over a supervisor

- As you are filling the mixer you need to be marking off the specific items on the mixer check off sheet. Please make sure this is dated with the production date

- Need to also make sure that the grinding log is filled out properly when you are adding grindings. No scribbles or overwrites

Requirements for Bread Production Mixer:

- Ability to push bread/bun trays

- Ability to lift 15lbs repetitively

- Ability to occasionally lift or push 50lbs

- Ability to operate hoist to help

- Ability to bend, kneel, and stoop as needed
